Summary / Abstract (Note)The concept of grain quality differs in the various steps of the rice postharvest system. Market quality is mainly determined by physical properties and variety name, whereas cooking and eating quality is determined by physiochemical properties. Grain quality has become an important issue that affects both domestic consumption and possibly international trade in rice.
